In 1974, Casa Bonita opened in Lakewood, Colorado, and more than half a century later, it was bought out of bankruptcy “as is” by the creators of South Park. Their goal was to restore the iconic restaurant to its former glory. Casa Bonita is not your typical restaurant; it spans 50,000 square feet and is designed as a fantastical rendition of an old Mexican village, complete with Old West outlaws, volcanoes, cliff divers, and even a gorilla that runs through caverns filled with stalactites.
Winging it was not an option.
